Coffee Meringue Kisses for Dad

Every Mother’s Day my husband asks me what I’d like to do. For 13 years my response has been the same. “24 hours in a hotel room by myself please.” I’m yet to receive this wish and doubt I ever will because Mother’s Day is all about the kids isn’t it?
Every Father’s Day I ask my husband the same question. For 13 years he has asked for a sleep in, a late breakfast followed by a long lunch. Every year he receives his wish because, unlike Mother’s Day, Father’s Day is all about the Dad isn’t it? Sigh…
This Sunday will no doubt be the same. I will get up at 4.00am to put on a slow roast shoulder of pork. Green beans and Brussells Sprouts will be trimmed and scored. I’ll make applesauce. Red will be uncorked, the table set and candles lit. The kids may, or may not help. Hmm, maybe I’ll provide all this OR maybe he can mow the lawn, clean the pool, scoop the poop, fix the wonky microwave door and make us all a cheese toastie. He will then be allowed to fall asleep in front of the TV whilst watching The Guns of Navarone for the seventy-billionth time.

What the kids and I will do is indulge his love of coffee. He has nearly every type of Nespresso capsule and has set up his own little cafe in the corner of the kitchen. So my 11-year-old daughter Grace and I have used capsules to create a delicious mid-morning treat for Sunday.  This recipe is dead easy. Give it a try. The meringues will store in an airtight container in the pantry for up to a week.
Nespresso Pods
Nespresso Coffee Meringue Kisses
Serves 20
Ingredients
  • 1 Nespresso capsule of your choice (we used Fortissio Lungo) 
  • 1/2 cup caster sugar
  • 1/4 teaspoon cream of tartar
  • 2 egg whites
Instructions
  1. Preheat your oven to 100c (convention not fan-forced).
  2. Place baking paper across two flat baking trays.
  3. Cut open the capsule and put the ground coffee into a bowl with the caster sugar. Mix to combine.
  4. Put the egg whites into a separate bowl and beat with an electric mixer until soft peaks form.
  5. Add the coffee/sugar mix bit by bit until all is combined and the meringue is stiff and glossy.
  6. Using a teaspoon or small piping bag, spoon the mixture in little blobs onto the baking trays, leaving at least two centimetres space around each.
  7. Bake in the oven for about 30 minutes, until the meringues are just hard to the touch.
  8. Remove and allow to cool completely.
  9. Serve with a huge milky latte and a squishy hug.
